Appearance: Deep red with violet reflections — a sign of intensity and concentration.
Nose: Bold and ripe, it reveals notes of black fruits, kirsch-like cherry, and roasted aromas. A slightly warm, spirited character adds richness and depth.
Palate: Broad and structured, with generous texture. The tannins are present yet smooth, supporting flavors of morello cherry, blackcurrant, and subtle spice. A wine of depth and energy.
Finish: Long, velvety, and refined, it expresses the generous character of the granitic soils of Saint-Hippolyte, bringing tension, power, and impressive depth to this Pinot Noir.

This structured red pairs perfectly with grilled or sauced red meats, feathered or furred game, and slow-cooked dishes with bold flavours.
Its intensity and concentration also make it a fine match for characterful cheeses such as aged Camembert, Roquefort, or creamy blue cheese. A dense and expressive Pinot Noir, ideal for a generous table.
